I scrolled past my photo on Instagram and thought... yum that looks good before realizing it was my own lunch! Have you ever wanted ramen... for me, it's all the time. That being said, sometimes you don't have hours to wait for it to be ready. Here's something delicious that will be ready in no time to hit that craving.
Pros: quick, customizable
Cons: doesn't replace real bone broth
Ingredients:
1 lb of pork
Your fave noodles
7-8 oz of coconut milk
3-4 oz of curry paste (I used massaman)
2 tablespoons of fish sauce
Quail egg or other egg (cooked how you like)
3 fingerling chilis, sliced (or the chili of your choice)
2-3 stalks of scallion, chopped
2 inch piece of ginger, minced
6 cloves of garlic, minced
6 cups of chicken stock
White pepper
Sugar
In a pot, start cooking your pork with the fish sauce on medium heat. When halfway done, add in your curry paste, a pinch of white pepper, a pinch of sugar, and your minced garlic/ginger.
Occasionally stir until your pork is well done. Add in your chicken broth and chilis. Heat through and simmer for 15 minutes.
During this time, boil your noodles until al dente and serve into bowls.
Top with your pork, broth, egg, and scallions. I used canned quail eggs but you can also buy them fresh or make jammy ramen eggs. Enjoy!
