Comfort food comes in all forms but mine mainly comes in the form of noodles. I love a bowl of noodle soup but stir-fries are a close second. Udon is a versatile noodle and they have such a nice chew. They take on the flavor of whatever you're making. Hope you enjoy!

Cons: really wait for the pan to get hot first so you're not boiling ingredients
Ingredients:
1/2 lb sliced beef
1/2 medium yellow onion, sliced
6 oz of cooked udon
4 cup of greens (I used Chinese broccoli)
1 pack of enoki mushroom (cut and cleaned)
6 cloves of garlic, sliced
1 tablespoon oil
1 tablespoon soy sauce
1 tablespoon dark soy sauce
1 tablespoon sesame oil
1 tablespoon sugar
1/2 teaspoon rice vinegar
Salt
White pepper
Sesame seeds
Prep all your ingredients before cooking. Marinate your meat with some salt and white pepper. To prep your sauce, mix your soy sauce, dark soy sauce, sesame oil, sugar, and rice vinegar together.
Get a large pan or wok piping hot with some oil. Add in your beef and cook until halfway done.
Add in your onions and garlic next. If you have any stems with your greens, add them at this point.
After a minute, add in the rest of your greens and mushrooms. Stir-fry for another minute.
Add in your udon and sauce! Mix until well combined.
When the noodles are warmed up, you're done. Serve with a little more white pepper and sesame seeds.
