Spicy Peanut Butter Noodles

This dish is perfect for when all you have the energy to do is boil pasta. It's also perfect for when you really want peanut butter or carbs. So basically this recipe is just perfect for 99% of your life. It's quick and you can substitute whatever protein you prefer, or just skip that step entirely.


Pros: easy, items are accessible

Cons: if you have allergies, substitute for another nut or seed butter


Ingredients:

  • 1/2 lb of pasta or noodles

  • 1/4 lb of ground pork (optional)*

  • Salt (if using meat)

  • 1/4 cup of peanut butter (preferably smooth)

  • 1/4 cup of soy sauce

  • 2 tablespoons of rice vinegar or black vinegar

  • 2 tablespoons of honey

  • 2 cloves of minced garlic or garlic powder**

  • Scallions for garnish (optional)

  • Olive oil

  • 2 tablespoons of chili oil (or add a squeeze of sriracha)

 
  1. Cook your pasta or noodles until al dente. Reserve 2 tablespoons of pasta water. When setting the pasta aside, add a bit of olive oil so the pasta doesn't stick to each other.

  2. Cook your pork or other ground meat with some salt. If the meat is very lean, add in a bit of oil. Toss in your minced garlic when the meat is almost done. If you're not adding protein, skip this step. I eat this all the time meatless!*

  3. In a small bowl, mix your peanut butter, soy sauce, vinegar, honey, chili oil, and garlic**. If you're not cooking a protein, substitute for about 1/2 teaspoon of garlic powder here. Mix and add in 2 tablespoons of pasta water.

  4. Toss your pasta, meat, and sauce together! Garnish with scallions and enjoy!
