Creamy Goat Cheese, Bacon & Date Dip

This dip is the epitome of indulgent. Imagine a bacon wrapped date... but instead of it being gone in one bite... the deliciousness is spread across many bites! This dip was a hit this Christmas and is perfect for any special occasion coming up. Serve on bread, crackers, or with vegetables. I loved dipping carrots into the bowl!

Cons: definitely for special occasions


Ingredients:

  • 1 small yellow onion (diced small)

  • 3-4 strips of bacon (chopped small)

  • 4 dates (pitted and chopped)

  • 1 teaspoon of sugar

  • 4 oz softened goat cheese (I used one with herbs in it)

  • 2 oz softened cream cheese

  • 4 tablespoons of cream

  • 1/2 lemon

  • Scallions/chives (optional)

  • 1 baguette (sliced)

 
  1. Starting with a cool pan, cook your bacon on medium heat until the pieces are crispy. When done, remove the bacon from the pan and onto a piece of paper towel. Reserve half the bacon grease for the onions.

  2. In the same pan, caramelize your onions on medium heat. Add your teaspoon of sugar and 4 tablespoons of water to speed things along. Stir often so the onions cook evenly. Once you start to see even browning, add in your dates and stir to soften them up. The whole process should take about 30 minutes.

  3. In a bowl, whisk together your goat cheese, cream cheese, and cream until you have a fluffy texture. Add in a squeeze of lemon.

  4. Top your cheese dip with onions, dates, and bacon pieces. Optional to add chopped scallions or chives!

  5. Toast your bread or prepare your dipping vehicles. Enjoy!
