Seems like banana bread is really having its moment right now! I recently made several batches of these banana nut muffins... each batch only lasted about a day. Long story short, this recipe is here to stay. The only thing in the way of making a third or fourth batch is temporarily running out of bananas...
Pros: easy, yummy, somewhat healthy
Cons: snacking every 30 minutes
Ingredients:
2 cups of flour
3 very ripe bananas
2 eggs
4 tablespoons of milk
1 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons butter
1/2 cup brown sugar (more if you like it sweeter)
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1 cup walnuts
Preheat your oven to 350 degrees.
Combine everything in your mixer (adding the walnuts last)! If you don't have a mixer, be sure to mash up your bananas first.
Spoon into your muffin or cupcake tins until 2/3 full (makes about 15) and bake for 15-17 minutes.
Enjoy them while they last!
